Here the marketing and the evidence part company. Single glycaemic index numbers for besan circulate freely, and none traces back to a published Indian human study of the flour.
What has actually been measured is more interesting. In a controlled feeding study, whole chickpeas eaten before a meal lowered blood glucose by 29 to 36 per cent against an energy-matched white bread preload in healthy women, and reduced how much they ate at the following meal. That is a substantial effect for a single food.
The flour behaves differently. In a randomised crossover trial, chickpea flour bread baked in place of wheat flour produced no significant difference in calculated glycaemic index against white bread. The reduction in glucose area under the curve was a non-significant trend at P equal to 0.087, and the insulin response was significantly higher than the control, which the authors flagged as needing further study rather than as a benefit.
A separate Indian breakfast study points the same way: among four test meals, the one built on a wheat, barley, and gram flour blend produced the highest glycaemic index of the group.
So the reliable finding attaches to the whole pulse rather than to the flour, and grinding is not a neutral step.
