Besan for Weight Loss: What Gram Flour Delivers, and What It Does Not

Besan is usually sold on two claims: that it is high in protein, and that it is low glycaemic. One of those holds up considerably better than the other.

Gram flour is genuinely one of the more protein-dense flours in an Indian kitchen, and it is not the fat-storing villain its association with pakoras suggests. But the blood-sugar case for the flour is weaker than the case for the whole chickpea it is ground from, and that distinction has been measured. This piece separates what besan reliably does from what gets claimed on its behalf.

The protein number is a range, not a figure

Ask what besan contains and you will be given a confident number. It should be a range. Compilations quoting India's national food composition tables for raw besan give protein anywhere from 21.6 to 22.5 g per 100 g, total dietary fibre from 10.9 to 15.2 g, and energy from about 329 to 387 kcal. One separate laboratory analysis of raw Bengal gram flour reported 21.85 g protein, 4.59 g fat, and 377 kcal per 100 g.

The spread across sources that all claim to be quoting the same national table means those transcriptions disagree with each other, and none of them was confirmed against the primary table cell when this was checked. Two conclusions survive that uncertainty, and they are the two that matter.

Besan carries roughly double the protein of wheat atta, which is a real and useful difference. And at somewhere between 330 and 380 kcal per 100 g it is no lighter than the flour it replaces, so a besan dish is not a low-energy dish by virtue of the flour.

What the protein is worth once digestibility is counted

Protein quantity and protein quality are separate questions, and plant proteins usually lose ground on the second. The current reference method is the digestible indispensable amino acid score (DIAAS).

One study of six cooked pulses measured true ileal digestibility in growing pigs as a model for humans and returned a score of 76 for chickpeas against the reference pattern. Across the wider literature, chickpea scores range from roughly 0.66 to 0.84 depending on how the pulse was processed and which reference pattern was applied.

There is no Indian-measured value for besan specifically, and every score in circulation is borrowed from non-Indian laboratory work. The six-pulse study was run on Chinese cultivars, and the wider range draws on Canadian and Australian material, so the varieties behind these numbers are not the ones sold in an Indian market. That is a reason to read the score as a rough ranking rather than a precise measurement.

In practical terms, a medium chilla built from 40 to 50 g of raw besan puts roughly 9 to 11 g of protein on the plate before quality is discounted, which is a calculation from raw flour content rather than a measured value for the cooked dish. That is a respectable contribution to a breakfast and it is not a protein meal on its own.

The low-GI claim runs ahead of the measurements

Here the marketing and the evidence part company. Single glycaemic index numbers for besan circulate freely, and none traces back to a published Indian human study of the flour.

What has actually been measured is more interesting. In a controlled feeding study, whole chickpeas eaten before a meal lowered blood glucose by 29 to 36 per cent against an energy-matched white bread preload in healthy women, and reduced how much they ate at the following meal. That is a substantial effect for a single food.

The flour behaves differently. In a randomised crossover trial, chickpea flour bread baked in place of wheat flour produced no significant difference in calculated glycaemic index against white bread. The reduction in glucose area under the curve was a non-significant trend at P equal to 0.087, and the insulin response was significantly higher than the control, which the authors flagged as needing further study rather than as a benefit.

A separate Indian breakfast study points the same way: among four test meals, the one built on a wheat, barley, and gram flour blend produced the highest glycaemic index of the group.

So the reliable finding attaches to the whole pulse rather than to the flour, and grinding is not a neutral step.

What five weeks of chickpeas actually changed

Acute testing measures the next two hours. Only one study in this area ran long enough to say anything about a diet. Twenty-seven free-living adults completed a randomised crossover comparing a chickpea-supplemented diet with a fibre-matched wheat-based diet, five weeks on each, with the chickpea arm including bread and biscuits made with 30 per cent chickpea flour.

The result was small, real, and not the one the internet promises. Total and LDL cholesterol fell significantly on the chickpea diet. Glucose tolerance did not differ between the two diets. Weight was not the endpoint.

If you are adding besan to your week, the outcome with the strongest supporting evidence is a lipid one, not a glycaemic one and not a weight one. No controlled trial has tested besan itself, in any Indian dish form, against a comparator for weight or blood sugar.


Using besan for what it reliably does

The sensible uses of besan follow from the evidence rather than from its reputation.

  • Replace a portion of atta, not all of it: Swapping 30 to 40% of the atta in your dough for besan raises protein and fibre content, and it is worth doing on those grounds. Treat it as a composition upgrade rather than a blood-sugar intervention, because the one trial that tested exactly that kind of substitution found no glycaemic benefit.
  • Add volume through what goes into the batter: Spinach, grated carrot, onion, and capsicum lower the energy density of the finished dish. The besan itself does not.
  • Keep the whole pulse in the rotation alongside the flour: Chana, chole, and sundal carry the evidence that besan is usually credited with, and there is no reason to choose between them.
  • Introduce it gradually if tolerance is a concern: Besan is a pulse flour, and some people find it hard to digest in quantity or when it is new to them. If bloating is persistent rather than occasional, that is worth raising with a registered dietitian.

If besan has been in your rotation for months and the weight has not moved, the flour was never the variable.
