Besan Chilla Calories: Why the Same Dish Is Costed at 67 and at 236

Look up how many calories are in a besan chilla and you will find 67 on one site, around 120 on another, and 236 on a third. None of them is lying.

A chilla is a variable quantity of gram flour cooked in a variable quantity of oil, and both of those vary by a factor of two or more between kitchens. What follows is what is actually known about the dish rather than the flour: how much oil it takes up, what its measured portion is built from, and what has and has not been tested about the finished chilla.

Why one dish carries four different calorie figures

The disagreement is not really a database problem, though published Indian food data has plenty of those, and why two apps can cost the same home-cooked meal so differently is covered in our piece on calorie app disagreement. The chilla case is simpler and more physical. Nothing about the dish is standardised.

ICMR-NIN's food exchange system treats 25 g of raw pulse as roughly 90 to 100 kcal, carrying about 6 to 7 g of protein. A medium chilla is commonly made from 40 to 50 g of raw besan, which scales to somewhere around 145 to 200 kcal from the flour alone, before a drop of oil goes into the pan.

A 67 kcal chilla is not impossible, but it describes a much thinner, smaller chilla than most people spread on a tawa, and it is not the chilla you are eating if you made it from four tablespoons of besan.

That is the whole of the mystery. The number you find online is a statement about someone else's recipe.

Gram flour holds on to less oil than almost any other batter

Here is the finding that runs against the reputation of the ingredient. An Indian food science group measured oil uptake by flour type during frying and found that gram flour based snacks absorbed 4.52 per cent oil by weight. Refined wheat flour snacks in the same conditions absorbed 30 per cent, and soy flour snacks 9.33 per cent. The authors attributed gram flour's resistance to its protein and insoluble fibre limiting how far oil could penetrate.

That is a genuine and underappreciated property of besan as a batter. It is also narrower than it sounds. The study deep-fried its samples at 185 to 200 degrees, which is not what happens on a tawa, and the figure describes oil absorbed by the food, not oil used to cook it.

The oil that stays in the pan still counts

This is where the chilla arithmetic actually turns. Oil that a chilla does not absorb has not disappeared. It is in the pan, and most of it ends up on the plate under the chilla or on the next one.

The best available comparison of the two cooking methods, from a Brazilian food science study, found shallow-fried recipes absorbed 7.4 per cent of oil by weight against 15.0 per cent for deep-fried recipes. Every shallow-fried item it tested was a cut of meat rather than a batter, so applying that ratio to a chilla is an estimate, not a measurement. No Indian study has measured oil uptake in a tawa-cooked chilla at all.

The practical consequence is straightforward. Because besan takes up so little of what it is cooked in, the amount of oil you eat with a chilla is decided almost entirely by how much you put in the pan, not by the dish.

ICMR-NIN's 2024 dietary guidelines work to a visible-fat allowance of around one teaspoon per meal in their sample menus. A tablespoon poured in by eye is close to three times that, in a dish that would have been perfectly happy with the teaspoon.

Measuring the oil, rather than counting the chillas, is the intervention that actually moves the number.

What a chilla-sized portion is built from

Raw besan per chilla

A chilla can contain 20 to 50 g of raw besan. This sets the base energy and most of the protein.

Oil into the pan

The amount of oil used can range from 1 tsp to 1 tbsp. This is the largest single swing in the calorie count and the easiest variable to control.

Number eaten

The number of chillas eaten can range from 1 to 4. The number multiplies the energy and other nutritional contributions from the ingredients used in each chilla.

Vegetables folded in

Vegetables can range from none to a generous handful. They add volume and fibre for very little energy.

What it is served with

A chilla may be served with chutney, curd, butter, or ketchup. These accompaniments can quietly rival the chilla itself in their contribution to the meal.

Vegetables are the only line on that list that makes the dish larger without making it heavier, which is a good reason to be generous with onion, tomato, spinach, and coriander. And the accompaniment is the one most people forget to count, because it arrives in a separate bowl.

What the dish itself has been measured to do

Very little, and it is worth being direct about that.

The only measured Indian glycaemic index for besan chilla comes from a single thesis, which reported a mean of 60.08 with a standard deviation of 24.54 in non-diabetic subjects. An interval that wide is not a usable number. The frequently quoted figure of around 35 for besan or besan chilla has no traceable published source behind it, and should not be relied on by anyone making decisions about their blood sugar.

The same work measured steamed khaman, another gram flour preparation, at around 45 overall, again with a wide spread.

The nearest controlled evidence for a cooked chickpea-flour item comes from Lebanon, where a randomised crossover study replaced 30 per cent of the white flour in a flatbread pastry with pre-processed chickpea flour and measured the response in sixteen healthy women. It found modest reductions in glucose and insulin that did not reach statistical significance, and no significant effect on how much participants ate afterwards.

No controlled trial has tested besan chilla, or any equivalent Indian gram flour dish, against a comparator for weight loss or glycaemic outcomes. Everything sold as evidence for the chilla is really evidence about chickpeas, measured in a different food, usually somewhere else.

If blood sugar or PCOS is the reason you are asking

A chilla is a reasonable thing to eat if you are managing either. It is not a treatment for either, and the specifics are not ours to set.

If you have been told your glucose readings need watching, how a particular breakfast affects you individually is something to work out with the clinician who manages your monitoring, not something to infer from a chart or from testing yourself unsupervised.

If PCOS is the context, the evidence points towards overall dietary pattern, energy balance, and consistency rather than any single dish, and the diagnosis itself varies enough that generic advice fits poorly.

Where a chilla earns its place at breakfast

The honest case for besan chilla is not that it is a 70-calorie breakfast. It is that it is a pulse-based breakfast in a rotation otherwise dominated by rice and refined wheat; it takes vegetables well; it needs very little oil to cook because the flour resists absorbing it, and it is quick enough that people actually make it. That is a good set of properties, and it does not require a glycaemic index number to justify.

If the chillas have been thin, the oil measured, and the portions honest for months and the weight still has not moved, breakfast is not the problem. That is the point at which a closer look at your history and metabolic markers is more useful than another adjustment to the recipe.
